Vanilla-Berry Shaved Ice
6 cups (1.5 L) water
3½ cups (875 ml) sugar
¼ cup (60 ml) corn syrup
¾ teaspoon (3.75 ml) pure vanilla extract (optional)
2 pounds (1 kg) coarsely chopped fresh berries [strawberries,
blueberries, raspberries or blackberries, about 2 cups (500ml)]
24 ice cubes
In a saucepan, combine the sugar, water and corn syrup. Bring to a boil, and boil
for about 1 minute, stirring often until sugar is dissolved. Remove from heat and
allow to cool for 10 minutes. If using vanilla extract, stir in at this point. Stir the

puréed. Let mixture chill thoroughly before drizzling approximately 6–8
tablespoons (90-120 ml) of the syrup over shaved ice.
